This post is a little late in the day, but this soup is amazing. Once again, this comes from Perrys' Plate. Oh and you should all stop by there because she is celebrating three years of blogging with an amazing give away!
Okay, back to Meatless Monday!
We replaced the onions with leeks, because that's what we happened to have in the refrigerator.
Nick took this last picture. He was so proud of his staging, and I think he did a great job. He ate this soup for lunch a few days later, and said that he tasted even better later.
